TARTINE Bakery & Café… is all about pies! The kind of pies your great-grandmother used to make. Tucked into one of Itaewon’s small side alleys, Ruby Edwards’ TARTINE Bakery & Café offers a cozy European atmosphere with its fine Belgium and European antiques and a German grandfather’s clock that ticks away the stress of the day while you enjoy a cup of rich, dark drinking chocolate.
TARTINE Bakery & Café owners, Luke Lee and Chef Garrett Edwards offer Koreas’ only 100% handcrafted American [USA] pie. All of their pies are baked on the premises in small batches throughout the day to assure the freshest and best tasting pies. TARTINE’S 7 Chefs and 14 Service Staff Members are dedicated to the highest standards and customer service possible.
TARTINE uses only the finest ingredients available locally and imported. The pie crusts are hand crafted from a recipe that has been in Chef Garrett’s family for generations. The Flourless Chocolate Torte and Cheesecake are unpretentious and simply the best in flavor and texture. Of course, A La Mode [with ice cream] is a must!
Romanian Peasant Bread [Artisan Bread] along with Cheese Bread and made-in-house, 100% Pure Butter is also available. Everything at TARTINE Bakery & Café is fresh and hand made. Down home goodness in every bite.
And there is now TARTINE TOO where you can enjoy brunch from 9am to 3pm Tuesday through Sunday.
Aunt Della Mae’s Biscuits and Southern Cornbread will be regular favorites along with TARTINE's own freshly made Ruby’s Pure Butter and jams. TARTINE TOO makes its own sage summer sausage patties and offer bacon and a nice sausage in casings. The signature dish is a German Pancake. Light omelets are served with TARTINE's hearty peasant breads. To top it all off, free drip-coffee refills.

Ruby Edwards’ TARTINE Bakery & Café Peasant Bread
Peasant Breads are mostly European in origin and TARTINE’S recipe originates from Romania. They use a blend of un-bleached wheat and whole wheat flours along with coarse ground rye flour and grains and then add water, yeast and salt. Chef Garrett doesn’t use any fillers, conditioners, mixes, improvers or oils; who can improve on the basics?
TARTINE’S bread is unlike most bread, in that it is mixed and then aged for 3 to 7 days, then formed, proofed and baked. The ageing of the dough brings out the flavor of the grains and Sourdough base and gives the bread its unique texture and taste.
Ruby Edwards’ TARTINE Bread has a dense coarse hearty crumb and a stiff crunchy crust, not at all like breads made with more refined flours. TARTINE’S Peasant Bread is made by hand using the same simple bread baking traditions used for over a thousand years.
